There’s nothing to eat!!

Me: Mom, I’m hungry.

Mom: There’s food in the fridge.

(Opens the door to show a completely full fridge.)                                                                                                                    

Me: Ugh, there’s nothing in here.                                                                                                                                               

Mom: Yes, there is. You just have to cook it.

If I had a dollar for every time I had this exchange with my mom, I could easily buy my dream flat in London.

I find myself now having the same exchange, but only with myself. My fridge can be filled with healthy, fresh food, and all I can think is that there’s nothing to eat. Why can’t I put food into my fridge and have it come out ready to eat? If someone could figure that out, they would make a killing.

In recent years I have made an effort to cut back on processed foods. They’re filled with chemicals and toxins, which aren’t good for me, or anyone else. However saying goodbye to them has meant getting more creative and doing more planning to have those quick ready to eat meals.  It’s a daily challenge for me to choose the healthier options and take the time to make healthy food easy for me.
